Well after initially being unsure of which Ring to get into, I've finally nailed it down. My Wardenship will be in Wood, in the Striders, and I will be involved heavily as a Keeper of Earth and Gold as well.

Gold seems a popular secondary Ring, but no primary. That's possibly good from the perspective that we can then divide Gold relationships among members with specializations in approrpiate areas.
For Steel, I'm betting the non-aggression statement being front and center is driving more martial-minded folks to consider other orgs first (which I'm okay with--we want Steel folks that understand we're not going to be out smacking down everybody we meet).

Once we start playing I might see what the warrior's life is like, but I think I'll enjoy healing more, hence light instead of steel.

Given the number of Law/Good Warrior Orders already running around, I expect a few solid alliances should help keep the need for militant pvp raiding/counter-raiding down. If Circle of Steel numbers remain low I foresee us being more needed as bodyguards, bounty-hunters, skirmishers and caravan/settlement guards assisting the other circles than doing large-scale warfare (outside of the occasional multi-guild alliance affairs).
Which is fine with me.

It is worth remembering that whilst battle clerics and druids are no longer the ovrpowered combat monsters that kicked fighter/barbarian butt of early 3.5 they can still be pretty formidable. Plus no need to talk about paladins in combat, especially when they get their smite on. I also get the impression the proposed level-less PFO skill system will make creating combat capable divine casters very viable.
Be assured when the need arises the other rings will be more than capable of putting up some frontline fighters and will not just be standing around casting the odd buff and waiting to heal people.
I see the Steel as providing the essential core of dedicated warriors and officers that the combat capable from the other rings will rally around and take orders from.

Precisely, Steel exists to provide the professional (as opposed to militia) soldiers - formation combat experts. We just need enough to fill a formation.

We will. There's two years left yet. I see the different Rings getting spikes when Goblinworks announces different attributes of the game. The Ring of Steel will get a bump when we talk about weapons and mass warfare. The Ring of Shadow will get a bump (or hit) when they finish smoothing out stealth. The Rings of Earth and Iron will get a bump when they talk about crafting and gathering as it has to do with peasants. ...and so on.

I imagine we'll also probably have some random creatures and NPCs to deal with, so at the least, Steel can go monster hunting with Light.

We will. There's two years left yet. Didn't your read the most recent Blog Post? Thanks to the Kickstarter, EE is only a Year and a Half away now Still plenty of time. There are likely those that are waiting till closer to the time they will be playing before deciding on a Guild to join. Also, with only a few thousand players as the starting base for EE there just won't be enough potential members to fill out large fighting groups in addition to groups for every ring. Right now we only have enough members for 4-5 per Ring if each member had to choose only one Ring and they were evenly spread. Fortunatly, everyone in EE will have Destiny's Twin so we can use ALts to fill in gaps when it comes to putting operations together.
